# How To Make It:

01 - Preheat oven to 375°F. Lightly grease a rimmed sheet pan with olive oil or nonstick spray.
02 - Arrange tortillas on the pan, folding up the edges slightly to create a shallow cup for each.
03 - In a bowl, whisk eggs with milk, salt, pepper, and smoked paprika until well combined.
04 - Evenly divide the egg mixture among the tortillas. Sprinkle shredded cheeses over the eggs.
05 - Add desired toppings by scattering cherry tomatoes, red onion, bell pepper, and cooked sausage or bacon if using.
06 - Bake for 16 to 18 minutes, or until eggs are just set and cheese is melted.
07 - Remove from oven. Top with avocado slices, cilantro, and a spoonful of salsa. Serve immediately.

# Helpful Tips:

01 -
  • Everything bakes together on one pan, so you can sip coffee instead of flipping individual tortillas at the stove.
  • The edges of the tortillas get golden and crispy while the eggs stay soft, creating a texture contrast you can't get any other way.
  • You can prep all your toppings the night before and just assemble in the morning when your brain is still half asleep.
  • It scales up or down easily, whether you're feeding two or twelve without changing the technique.
02 -
  • Don't overfill the tortillas with egg mixture or they'll overflow onto the pan and make a mess instead of staying contained.
  • Let the pan cool for a full minute before adding avocado and cilantro, or the heat will turn the avocado brown and wilt the herbs.
  • If your tortillas are stiff or cold, warm them in the microwave for ten seconds so they fold easily without cracking.
03 -
  • Brush the tortilla edges with a little melted butter before baking for extra flavor and a deeper golden color.
  • If the eggs start to puff up too much in the oven, crack the door open for the last two minutes to let steam escape and keep them tender.
  • Add a squeeze of lime juice over the finished tacos right before serving to brighten all the flavors and tie everything together.
